APRICOT LOAF BY CLAUDIA

                             

                       
                             Ingredients:

Makes one loaf.
1/2 cup finely chopped dried apricots.
1/2 cup milk.
125 grammes butter.
1/2 cup caster sugar.
3 eggs.
2 cups self-raising flour.
1 teaspoon grated lemon rind.
1/4 cup chopped  walnuts.
  
                                                  METHOD

First, put apricots and milk in a bowl.Set aside for 30 minutes.

Next, turn oven to 180º C,grease.

Later, beat butter and sugar well until smooth and creamy.

After, add eggs.Beat them in very well.

After that, mix in apricots and milk.Stir in lemon rind.

Later, sift  in flour.Mix it in well.

Then, spread it all evenly in the tin.

Finaly, sprinkle walnuts on top.Bake 55-60 minutes.
